Q.
Describe your favorite rice-based dish.
A.
Rice is a staple in Asia so it is no surprise that there are so many rice-based dishes here in Malaysia. My favorite rice-based dish is the “nasi lemak,” a dish from the Malays in Malaysia. Nasi lemak literally translated from Malay means rice in cream, because the rice is cooked in coconut milk and flavored with the leaves of a local plant called pandan. The traditional nasi lemak is served with fried and crispy anchovies, small fried fish, peanuts, boiled egg, lamb curry, cucumber slices, and a local chilli paste known as sambal. A good plate of nasi lemak is judged based on the sambal chilli paste and the rice. The rice has to be fragrant and well-cooked and the sambal has to be just the right amount of spiciness and sourness before the dish is judged well done. Today, nasi lemak is served with new varieties of side dishes, including chilli shrimp, fried eggs, and vegetables.
