The Victoria Sponge is a two-layer sponge cake that is filled with a layer of jam and whipped cream. The invention of baking powder in 1843 allowed the sponge cake to rise higher. Sponge cake is created using a mix of sugar, butter, eggs, and flour. This simple cake was one of Queen Victoria’s favorites. After her husband died, Queen Victoria spent her time at the Isle of Wight. It was here that the Victoria Sponge Cake was named after her.
